Keto Stuffed Peppers

Ingredients:


PAM or Olive Oil Cooking Spray

1 pound ground beef (80% lean)

1 pound Jimmy Dean Premium Pork Hot Sausage

1/2 cup finely chopped onion or McCormick Minced Onions

1 packet Taco Skillet Seasoning

2 cups shredded Mexican blend cheese, divided

1 pouch Nature's Earthly Choice Riced Cauliflower


Instructions:


Preheat oven to 375°F; I used my Ninja Foodi™ 10-in-1 XL Pro Air Fry Oven.


Spray 9x13-inch baking dish or 8" round spring form pan with oil spray.


Brown the ground beef, sausage and onion in a large skillet over medium heat; drain well and set aside.


Stir in taco seasoning; 3/4 c of water with the pouch of riced cauliflower and cook until hot. Stir in 1 cup of cheeses .

While the meats are browning, cut the top 1/3 portion off of each pepper and remove the seeds. Place cut side down in baking dish and bake 15 minutes.

Remove peppers from oven and stuff with ground beef mixture. Top with remaining 1 cup cheese. Bake 10 minutes, until cheese is melted and peppers are tender.


Meanwhile; if desired; prepare guacamole mix according to package directions. Serve peppers topped with lettuce, tomato, 2 tablespoons guacamole and cilantro.
